Anti-inflammatory properties
Olive oil, in addition to oleic acid, contains a range of micronutrients, such as phenolic compounds, which have been shown to possess antioxidant (1), anti-inflammatory (2,3), and antithrombotic (4) activities in cell cultures and in vitro studies. The consumption of a diet containing olive oil rich in phenolic compounds seems to prevent the endothelial dysfunction associated with acute fat intake. (5)

Other Benefits of Extra Virgin Olive Oil

Many research (1,2,3,4,5,6,7) concluded that oleic acid, the main fatty acid in olive oil, appears to significantly reduce the risk of developing breast cancer and that using olive oil in the diet may help prevent development of bowel cancer thanks to the protective effect of sqaulene, flavonoids and polyphenols - all antioxidants found in olive oil.
